The recipe for the best potato rolls in the world

You think I'm kidding. I challenge you to find a better recipe! Every time these people beg for the recipe and say, "These are the best rolls I've ever had." I made this for my husband for the first time last week and when he bit into one, his eyes lit up like a kid at Christmas! He was in love! They are so incredibly soft they feel like a cloud! A warm, buttery cloud. The cloud rolls. I don't think I can handle Thanksgiving this year with these rolls and myPecan cake with brown butter.

These rolls keep giving. They reheat beautifully in the microwave, so make plenty because you'll want them for all your leftovers. Make turkey sandwiches, dip them in gravy and eat them!

What is a Potato Roll?

The potato rolls have potato flakes! I use Bob's Red Mill brand of fries because that's the one I can easily find at Walmart and other supermarkets. I just received a bag and it lasts for several batches of these rolls. Plus, if you're in a pinch, potato flakes make a great instant mashed potato! But will these buns taste like potatoes? No. They just make the texture softer and smoother. They really are dreamers andhePerfect dinner roll for Thanksgiving, Christmas or any occasion. No bread machine needed! Just your oven!

That was what his training was for. Froth up that butter! Sure, they're great even without the butter from the oven, but I prefer them because I don't butter them when I eat them. These with jam are divine!

Don't let sourdough breads scare you! It's just another ingredient. The only mistake you can really make is making your yeast mixture too hot! This will "kill" the yeast so it can't do its job of raising the loaves.

How to make potato rolls

The dough is very loose, but don't worry! If it's too sticky when you start rolling it out later, just add flour! Oh, and you don't need a bread hook! I don't even know why I used it this time because I normally just use my regular palette. But you can also mix by hand! However, using the mixer bowl makes it easier because you can let the mixer do some of the kneading.

After the dough has risen, you will separate the dough into 3 parts and roll each one into a circle like a pizza. Try to make it a little thinner so your crescents have more layers. Don't forget to flour your countertop!

Then cut like a pizza and roll each "slice" from the long end (where the pizza dough would be) to the tip to form your crescents. I'm obsessed withthis pizza/dough cutter.It comes with a blade cover so I don't risk cutting myself in the drawer!

Then place on a greased baking sheet (I use cooking spray) and let rise again. I like to use a kitchen towel to cover my dough as it rises. This photo is from after the second climb. So... bake muffins!

I wish you could taste them through the screen. We make them for Thanksgiving and they always sell out! Each batch makes 30+ rolls, but somehow they just disappear! Enjoy the best potato rolls in the world!

What kind of flour do I use for potato rolls?

This recipe calls for all-purpose flour, which is VERY good because I don't always have bread flour on hand. But let me tell you, flour is different from brand to brand. That's why when you make any sourdough bread, you have to pay attention to the dough as you make it. There are usually a variety of flours listed in recipe ingredients because every brand of flour is so different. My recipe calls for 7-8 cups of flour. You want to add enough flour to have a soft, manageable dough, but you don't want to add too much! I usually put all the flour in a small bowl and stir it into the dough a little while mixing. I stop adding it when the dough comes together and is firm enough to handle.

Secrets to the best rollers:

Okay, some tips to apply to ANY roll recipe! Brush some melted butter on top a few minutes before the rolls are finished baking and add a pinch of kosher salt! The butter will add a golden brown color and the salt will add the most decadent flavor. Their bagels range from amazing to "WOW! What bakery did you get these bagels from?"

Ingredients

  • 3cupsleiteI use whole milk
  • 3/4cupsugar
  • 3/4cupbutter without salt
  • 1cuppotato flakes
  • 1Soup spoonsal
  • 4big eggsroom temperature
  • 1Soup spooninstant yeast
  • 7-8cupswheat flour
  • 1/2cupbutter without saltVery soft

Instructions

  1. In a small saucepan, add milk over medium heat. You want to scald the milk, not boil it. So, when small bubbles and foam begin to form around the edge of the pan (a “skin” can also form on top), remove from heat.

  2. In a mixer or large bowl. Add sugar, butter, potato flakes and salt. Add the scalded milk after removing from heat and stir well. Allow to cool until lukewarm, around 120-125 degrees if you have a candy thermometer. You don't want it to be too hot when you add the yeast!

  3. Add the yeast and then the eggs and stir again. Add flour a little at a time, just add as much flour as needed! Different brands of flour do this, so the amount will vary. The dough will be very loose and may look hairy, that's okay! My dough is still quite sticky at this stage. I add more flour later if needed.

  4. Cover the container with a towel and let rise for 1 hour.

  5. Push down and divide it into 3 sections. (See photos above). One section at a time, roll out into a circle like a pizza on a floured surface. Try to make your dough very thin, like 1/4 inch. Spread some super soft butter on top! This will help make the layers even more delicious. Cut like a pizza into 12 pieces, then roll each slice starting from the wide end (where the pizza dough would be) toward the tip to form the crescent. Place on a greased baking sheet. Continue until all three dough sections have been formed. I used about 1 1/2 baking sheets!

  6. Let rise again until doubled in size (about an hour). Bake in a preheated 350 degree oven for 15-20 minutes. I keep my buns with about 5 minutes of cooking left!
