  3. Open the dough between two pieces of parchment paper. Grease a 9-inch pie plate. Remove the top layer of parchment paper. On the uncovered dough, invert the pie plate. Carefully invert the pie plate holding the dough.
  4. Pipe dough into bottom and sides of pie pan and gently push down. We put the dough in the fridge until it is ready, after crimping the edges and lining the bottom.
  5. Peel the sweet potatoes and add the pulp to a food processor. Add corn starch,salt, vanilla, cinnamon, nutmeg, ginger, maple syrup and coconut cream. Process until smooth.
  6. Fill the pie plate with the filling. Bake the cake for 40 minutes at 375 degrees Fahrenheit with aluminum foil covering the ruffled edges. After 20 minutes, remove the crust sheet.
  7. Remove cake from oven and allow to cool completely to set before slicing. Serve with whipped coconut cream on top.

Storage Methods for Leftover Vegan Sweet Potato Pie
